Supergreens Green Goddess salad

Do you also love salads? Then this Supergreens Green Goddess salad is for you! This salad contains a lot of vitamins, which makes you feel super healthy and this salad is also very easy to make.

For a jar of Green Goddess dressing:

  • 3 tbsp fresh spirulina – or 4 cubes of thawed spirulina
  • 75 gr (vegetable) Greek yogurt
  • 25 g flat parsley
  • 15g mixed green herbs – dill, coriander, mint, basil etc
  • 1 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 2 anchovy fillets or 2 tsp light miso (with miso the dressing is vegan)
  • salt and pepper to taste

For a Green Goddess salad for 2 people

  • 10 radishes
  • ¼ cucumber
  • 1 avocado
  • 1 (Chioggia) beet
  • green leaf lettuce to taste – little gem, spinach, arugula, it's all good

For the Green Goddess dressing, put the spirulina and the herbs in the food processor or blender with the yoghurt, olive oil, lemon juice, anchovies or miso and process to a nice smooth sauce. Taste and season the dressing with salt and pepper.

Cut the radishes into slices or quarters. Cut the cucumber into slices or cubes. Cut the avocado in half and slice it. Cut wafer-thin slices of the beetroot.

Divide the leaves over two plates and divide the rest of the vegetables over the plates as well. Pour the dressing over the salad.

This dressing is of course also delicious with other vegetables, such as roasted beetroot, peas, white beans or kale. Pasta or a boiled egg is also delicious!
